After a long day of work, commuting, household responsibilities or looking after family, the last thing most people want is a complicated dinner recipe with fifteen ingredients.

The good news? Everyday Indian food offers plenty of possibilities for quick, satisfying meals.

You do not need to cook a separate “diet dinner” to make thoughtful food choices. A little planning, a few versatile ingredients and a flexible approach can make weekday cooking easier.

Five easy dinner recipes to add to your rotation

1. Moong dal and vegetable khichdi

Combine rice, moong dal, water, turmeric and your preferred spices in a pressure cooker. Add vegetables such as carrots, peas or spinach for extra variety.

Adjust the proportions and cooking time to your preferred consistency. Serve with curd or a side of vegetables if desired.

2. Chickpea and vegetable bowl

Use cooked chickpeas, chopped cucumber, tomato, onion and leafy greens. Add lemon juice, spices and a little oil for flavour.

Serve the mixture as a salad, wrap filling or alongside roti. It is a useful option when you have leftover chickpeas in the refrigerator.

3. Brown rice with dal and vegetables

Cook brown rice according to the package instructions and pair it with masoor dal or another lentil preparation. Add a vegetable sabzi to complete the meal.

Brown rice generally contains more fibre than white rice, but both can fit into a balanced diet. Choose according to your preferences and needs.

4. Quinoa vegetable pulao

Rinse quinoa according to the package instructions. Cook it with vegetables, cumin, ginger and your preferred spices.

This offers a change from your usual rice dish. Quinoa is not essential for healthy eating, so use it when it fits your taste and budget.

5. Soya chunks curry with roti

Prepare a tomato-onion gravy with ginger, garlic and spices. Add hydrated, squeezed soya chunks and simmer until the flavours come together.

Serve with roti and a vegetable side. This is one way to bring a plant-based protein source into a familiar dinner format.

The simple formula for building a balanced dinner

Try combining three elements:

  • A protein source: Dal, chickpeas, beans, tofu, soya chunks or eggs.

  • A grain or other staple: Roti, rice or another grain you enjoy.

  • Vegetables: Seasonal vegetables, leafy greens or a mixed salad.

The exact combination and portions depend on your individual needs. You can adapt the formula to suit vegetarian, vegan or non-vegetarian preferences.

Make meal planning work for you

Cook a larger batch of dal or chickpeas when you have time. Wash and prepare vegetables in advance, and keep a shortlist of five reliable dinner recipes.

Healthy eating is easier when the next meal does not require a fresh burst of inspiration every evening.
